Everyone enjoys a good potato salad. We all grow up with a certain type of potato salad that we consider the best. This preference can keep us from understanding that there are a lot more solid tasting potato salads out there. My grandmother recently introduced me to the potato salad that we are going to make today. Piquant Sweet Potato Salad can be a meal in itself and this dish will prove that. You will be able to choose a mixture of colorful salad leaves with a range of sweet and bitter flavors that will leave you wanting more.
Piquant Sweet Potato Salad:
-1 sweet potato, peeled and diced
-4 baby carrots, halved
-1 bag mixed salad leaves
-4 celery stalks
-1 cup canned borlotti beans, drained and rinsed
-1 tbsp golden raisins
-4 scallions, finely chopped
-4 fl oz of Honey and Yogurt dressing
You will begin to make this dish by dicing and peeling the sweet potatoes. Once you have finished doing this, take the diced potatoes and cook them in a pan of boiling water until the potatoes become nice and tender. You will then need to drain and set the potatoes aside in a bowl. The next thing to do is cook the carrots in the pan of boiling water and draining them as well. Add them to the bowl in which you already placed your potatoes.
Take your beans out and drain and rinse them. Set the beans aside after you have done this. You will then cut the tops off the tomatoes and scoop out the seeds. Make sure to chop the flesh and then add it to the bowl. What you are going to do next is add the drained beans to the bowl mixture. Take your celery out and add it to the bowl as well.
Step three is going to revolve around actually preparing your mixture for serving. Grab yourself a large serving bowl that is solid enough to present the dish in. Line a serving bowl with the salad leaves. Your last step is to spoon your wonderful tasting mixture on top of the salad presentation. What you have done is create a tasty topping to the fine selection of salad leaves that you have chosen. Allow the topping to soak into the dish for a couple of minutes. This will allow you to enjoy a little extra flavor from the topping you spent a bit making.
Your final task of this dish is to take your golden raisins and scallions out. You will use both of these to sprinkle the top of the mixture and throughout the salad. Also, spoon on the Honey & Yogurt dressing and you are finished! Serve the salad to group of 4 people and send your taste buds into a land of excitement. All of the ingredients tie together very well. Enjoy!
