You mention raising the good cholesterol. The best way is by adding some foods high in Omega 3 such as salmon. Here is a salmon salad that does good for a sandwich, as a spread on whole wheat crackers, stuffed celery, or as an enhancement to a green salad. I have also halved a small cantaloupe and stuffed the center with this salad for a knock out presentation. Tastes great too, remember moderation is the key to any lifestyle change.
Smokey Salmon Salad
1 Large can of salmon drained and flaked
4 oz (½ block) firm Tofu drained & grated
2 carrots grated
1 Stalk celery fine diced
1 Tablespoon Garlic Powder
1/4 cup sweet pickle relish
1 Tablespoon liquid smoke
1 Tablespoon Worcester
1 small minced onion
50/50 mix of no fat sour cream and low fat mayonnaise to taste
Mix it, chill it, serve it. If you smile it’ll taste better, Guaranteed.
Don’t let the Tofu scare you. Grated, most folks think it’s grated egg whites. If you don’t tell I won’t and you children will receive the added nutritional benefit of the Tofu.
You might also replace the salmon with 2-6oz cans of Tuna if you are one of the folks that don’t care for salmon.
My youngest daughter loves to take this, some egg salad, Three slices of crisp bacon, and three slices of rye toast for a unique Club Sandwich.
Daughter number two takes this salad on Triscuits with some sharp cheddar cheese for a fulfilling midnight snack.
Mike, my Grandson, loves his on Triscuits too but he prefers American cheese and a big bowl of Grandpa’s Hungarian Chicken Noodle Soup on the side.
