I live in Fremont, Ohio. We’re home to the Fremont Company. The Fremont Company cans Sauerkraut under the Snow Floss and Franks label. I also was in the restaurant business fer over 25 years in Fremont, Ohio. One of the things we tried to do was support our local businesses. Mom developed a Sauerkraut Salad recipe that was wonderful. I know this is a restaurant sized recipe but at our house it git’s eaten like candy.

1 cup minced onion
1 cup slivered green bell pepper
4 cups grated carrots
2- 20 oz cans bean sprouts drained
1 number 10 can sauerkraut drained & rinsed
2 quart distilled vinegar
2 quarts water
10 cups granulated sugar
2 cups honey
Bring dressing ingredients to a boil till sugar is dissolved and completely incorporated. Chill in an ice bath. Toss vegetables together with the cooled dressing and allow to marinate in the refrigerator 24-48 hours. This will hold over 30 days in the refrigerator, perhaps longer but it never lasts that long at our house.

I had a dear friend (a local printer) that enjoyed this so much he would buy a full recipe fer his home use. His bride did some wonderful things with fresh fish and this was her favorite enhancement. About three times a week he’d come to the restaurant for a bowl of hearty beef barley soup and a bowl of sauerkraut salad.
My favorite lunch at the restaurant was a bowl of hearty ham & bean soup, a bowl of sauerkraut salad, and several hard boiled eggs. I didn’t eat it unless I had the night off since the side affects of this combination are a bit aromatic.
