Whatever the reason for a summer picnic, a semi home cake is the answer. Personally I call it semi-homemade, because I take a boxed cake and add to it to create a taste sensation so your taste buds get excited. It’s quick and easy to do.
Quick and Easy Cakes
Take a baked white cake, top with white frosting and prepared coconut. You can easily prepare cupcakes, top with white icing and sprinkle on coconut.
Open a can of fruit, drain the liquid into a measuring cup and dump the fruit in a cake pan. Now take a cake mix, add the other ingredients as directed but use the fruit liquid and add water to make the amount as called for on the directions and pour the mix over the fruit, but do not mix the fruit in. Now bake it according to the directions on the box. You can eave it plain and use as an upside down cake or top with cool whip.
Chocolate Cherry bomb
Not really an explosive cake by any means but you simply bake a 2 layer chocolate cake adding chocolate icing to both layers and stack it. Add a cheery with the stem attached to several areas upon the cake. It is melt in your mouth good.
Take a prepared chocolate cake and top with cool whip. Now take 1 Hershey plain chocolate bar and a vegetable peeler and peel the chocolate bar over the entire top of the cake. YUMMY!
Take a prepared white cake mix and mix up a small box of jell-o. Any flavor of jell-o will work so be creative. Now make small holes in the cake and pour the jell-o into the holes and spread cool whip over the top.
Take a can of mandarin oranges and drain the liquid into a measuring cup and set the fruit aside. Take an orange cake mix, add the liquid from the oranges adding more water to make the amount called for on the directions and bake it according to the directions. Now you’ll cover it in cool whip and lay the slices of oranges on top.
Bake a chocolate cake according to directions and when it’s cool top with cool whip and your choice of chopped nuts.
Red, white and blue cake!
Prepare a white cake mix according to the directions on the box but add a few drops of food coloring to it. The color you use in the cake; red or blue depends on the fruit you’ll put on the top. If you have a red fruit add a few drops of blue food coloring to the mix and bake it. Then top with cool whip and the red fruit. This is very good if you use red food coloring, top with cool whip and blue berries but on the other hand if you have raspberries you will want to use blue food coloring with the mix to get the red, white and blue effect. This is perfect the Fourth of July gatherings.
Peanut butter Surprise cake
Unwrap some peanut butter cups and line them up on the bottom your cake pan. Mix up a chocolate cake mix according to the directions and when it’s cool Top with peanut butter icing, serve and enjoy it.
You can have a semi-homemade taste by using a prepared cake mix, and adding different kinds of toppings. Cool whip is always a hit and better then frosting according to some people. Next time you make a box cake skip the icing and add cool whip.
Home made cakes are so yummy and I learned form the best, but I do realize not everyone has the time to create such cakes but honestly they do not take much more time to toss together then a cake mix does.
When I was a young teenager back in the late 70’s every summer for a few weeks I would spend the time with my maternal grand mother. Grandma Wright was a woman who had no time for all this convenience items that were appearing on the supermarket shelves. Every few days there was a new cake for us to enjoy and all were good but the coconut cake was my favorite.
Everything she baked was from scratch and it was wonderful to eat them as well. I loved the simple white cake with a butter cream frosting that had lots of freshly grated coconut on top. It was a wonderful cool refreshing treat on a hot summer day while relaxing on her porch after long day. A pressed for time person could use a white cake mix (according to directions on box), prepared white frosting and some shredded coconut.
Grandma in her infinite wisdom seemed to know instinctively what to add to a finished cake to make it sing in your mouth.
My grandma has since passed away but I still look back at those days with a great fondness for everything she taught me. I loved spending time with her and grandpa and I shall always remember those days long ago.
