He believed the weight lost was exclusively a calcium effect and repeated the study with milk. The difference in the results between calcium and milk was astounding.

Zemel conducted randomized studies on over weight people. He fed them a calorie restricted diet, calcium supplements and diary food for 24 weeks. Those given a low dose calcium supplement lost 6.4% of their body weight. Those fed a high calcium supplement lost 7.7%. Finally those fed the equivalent amount of calcium in diary foods lost 10.9% of their body weight. Additionally the diary food participants discovered that two-thirds of their weight loss was in the abdomen.

When the body isn’t getting enough calcium it releases the hormone calcitriol. Calcitriol constricts blood vessel and acts as a metabolic switch in fat cells, signaling cells to maintain fat and make more of it from the stored sugars. High calcium levels suppress calcitroil. Diary products are rich in the amino acid leucine which stimulates the building of muscle and acts as a fat burning furnace. Zemel recommends dieters have at least three servings of low fat dairy foods daily. The body can not absorb more than 500 milligrams of calcium at a time.

At McMaster University, in Canada, Stuart Phillips discovered that fat free milk boosts the ability of exercise training to build muscle and burn fat even while the athletic consume extra calories. The effects are more pronounced among women than among men. He recommends two cups of fat free milk right after exercise and again an hour later.
